Here is a basic strategy I found from Dave Colclough, one of the best Stud players in the world. Here you go for some rule of thumb starting hands in 7-stud.
If you are playing 8 handed then I would suggest you need
a) a high pair of Kings or Aces
b) a medium pair with an ace kicker
c) three cards of the same suit including the ace
If you were playing 4 handed then I would suggest
a) any pair is playable
b) any three cards to a suit (providing they are 'live')
c) any three high running cards (providing they are 'live')
d) AK or AQ with any other card
This is a good starting point for this game, and to me it seems like Stud you need to be even more patient, because it is harder to cooler people, if you start with a trash hand.
Another huge factor in stud vs. holdem is the face up cards. Make sure to really watch how many "live cards" or "outs" you have, master the ideal of counting cards quickly, so you can eliminate any outs on the board that you can eliminate from expectation.
